Ingredients
- 2 large potatoes pre baked and cooled
- 350 g turkey cooked
- 1/4 tsp Pepper
- 2/3 cup low-fat yogurt
- 2/3 cup cottage cheese
- 1 tbsp soy sauce
- 1/2 tbsp dill
- 1/2 cup Parmesan
- 1 tsp paprika
- 1/2 cup onion finely chopped
Instructions
- Cut each potato in half and scoop out the centres, leaving 1/4 inch shell.2 large potatoes
- Place potatoes and remaining ingredients except turkey and paprika in a bowl.1/4 tsp Pepper, 2/3 cup low-fat yogurt, 2/3 cup cottage cheese, 1 tbsp soy sauce, 1/2 tbsp dill, 1/2 cup Parmesan, 1/2 cup onion
- Mix until smooth using an electric beater.
- Fold in turkey.
- Preheat oven to 350 degrees.
- Fill potato shells with mixture.
- Sprinkle tops with paprika.1 tsp paprika
- Place in a baking dish. Bake 25 to 30 minutes or until lightly browned on top.
Notes
Simply recipe but the turkey and sprinkle of paprika makes this meal so good.
