Ingredients
- 1 tsp oil
- 100 g pork fillet sliced
- 2.5 cm ginger peeled and grated
- 1 bunch spring onions sliced
- 100 g mange tout halved
- 1 medium red pepper sliced
- 1 small carrot thinly sliced
- 1 clove garlic crushed
- 2 tbsp Thai green curry paste
- 150 g rice noodles dry weight
- 150 ml coconut milk reduced-fat
Instructions
- Heat the oil in a non-stick frying pan or wok.1 tsp oil
- Add the pork and ginger and fry for 3-4 minutes until browned and cooked through.100 g pork fillet, 2.5 cm ginger
- Add the spring onions, mangetout, pepper, carrot and garlic and curry paste and fry for 2 minutes.1 bunch spring onions, 100 g mange tout, 1 medium red pepper, 1 small carrot, 1 clove garlic, 2 tbsp Thai green curry paste
- Meanwhile, cook the noodles according to the pack instructions. Drain.150 g rice noodles
- Add the noodles to the frying pan or wok along with the coconut milk, bring to the boil to heat through.150 ml coconut milk

This is so tasty and so quick. Got home from work, changed and cooked this before my wife walked in. Simple instructions and the flavours are gorgeous.

Needed a bit of extra heat. Added a sliced red chilli which raised the heat to a good amount.
I actually used beef and it went very well together. I added a little hot sauce for a kick but is a good dish.
