I use sliced red chillies in this recipe but jalapenos are a perfect substitute for a more authentic taste.

Simple Guacamole

Guacamole is a superb Mexican dish that I would eat on its own. The flavour is amazing and you can pimp it as much as you want and it still tastes amazing.

  • Carefully slice the avocados along the length touching the stone as you go. Put one half of the avocado in each hand and gently twist. The avocado should separate easily.
    3 large avocados
  • Remove the stone and dispose unless you wish to grow an avocado plant.
  • Scoop the avocado flesh and place in a bowl.
  • Using a fork, mash the avocado to the consistency you prefer.
  • Add the tomatoes, garlic, coriander/cilantro, onion, lime juice and the sliced red chilli. Stir well to incorporate.
    1 large red chilli, 2 cloves garlic, 4 large plum tomatoes, ½ small white onion, 1 large lime, ¼ bunch coriander
  • Taste the guacamole and season with salt and pepper or possibly more lime as required.

  • Serve as a side dish or as a dip with chips and baked breads.

Notes

Note 1: Depending on how juicy your limes are you made need more than one. Pop them in the microwave for 10 seconds to warm them and release the juice better.
