Apple, Leek, and Sweet Potato Gratin is an adaption of a French classic. The addition of apple and leeks add tremendous flavour to this main dish. However, changing normal potato for sweet potato is a stroke of genius. The soft delicate flesh of the potato with the sweetness of the apple and leeks makes this a lovely side dish.

Ingredients
- 1 1/4 cups heavy cream
- 2 large Leeks thinly sliced
- 2 tbsp thyme Ccopped
- 2 large sweet potatoes thinly sliced
- 2 cups cheddar cheese grated
- 1 large apple cored, sliced
- 1 grates nutmeg
- 1 pinch salt to taste
- 1 pinch ground pepper to taste
Instructions
- Combine the cream, leeks, thyme, salt, pepper, and nutmeg in a saucepan and bring to a boil over moderate heat, stirring occasionally.1 1/4 cups heavy cream, 2 large Leeks, 2 tbsp thyme, 1 pinch salt, 1 pinch ground pepper, 1 grates nutmeg
- Add the sweet potatoes and simmer covered 10 minutes.2 large sweet potatoes
- Layer half the sweet potato mixture in a buttered baking dish.
- Top with the sliced apple.1 large apple
- Repeat with sweet potato mixture and cheese.2 cups cheddar cheese
- Bake uncovered in a preheated 375F (190C) oven for about 45 minutes, until bubbling and golden brown.
