Honey and Orange Carrots are a favourite with my children. They are soft and slightly sweet and have an amazing aroma. I cook these in the slow cooker as I’m lazy. However, you can adapt the recipe and cook in a pan by cooking the carrots part way in water before draining and adding the remaining ingredients to finish the side dish off. This is a lovely vegetarian dish that everybody enjoys.

Ingredients
- 1 lb carrots baby or Chanterey
- 2 tbsp honey
- 1/2 cup orange juice
- 1 tbsp butter melted
- 1 tsp ground ginger
- 1 tsp orange zest grated
- salt to taste
- parsley fresh garnish chopped
- ground pepper to taste
Instructions
- Place the carrots in the slow cooker.
- Combine the remaining ingredients except the parsley in a small bowl and stir to combine.
- Pour over the carrots and cook covered on low heat for 6 to 8 hours, or on high heat for 3 to 4 hours, until the carrots are tender.
- Garnish with chopped parsley.
Notes
I often add a little sprinkle of fresh rosemary when baking these carrots with a lamb dish.
