  • Preheat your oven to 200°C (180°C fan) / 400°F / Gas Mark 6. Line a baking tray with baking paper.
  • Unroll the puff pastry and place it flat on a lightly floured surface or straight onto the lined baking tray.

  • Brush the pastry all over with the beaten egg.
    1 large egg
  • Sprinkle the grated Parmesan evenly across the surface. Add a light grinding of black pepper if you like.

  • Cut the pastry into small squares, rectangles, or strips – about 3–4cm wide is ideal for bite-sized nibbles.
  • Bake in the oven for 12–15 minutes, or until puffed up and beautifully golden.
  • Cool slightly on the tray, then move to a wire rack to cool completely (if you can resist eating them straight away!).

Notes

Tips:
Other cheeses: Try using finely grated Gruyère, mature Cheddar, or a sprinkle of crumbled blue cheese for a different flavour.
Serving suggestions: Serve warm with a glass of sparkling wine, or alongside olives, cured meats, and a little bowl of chutney for an easy sharing platter.
