A superb variation of a dip. The black bean dip is an excellent side dish for not only a Mexican dinner but dishes from other parts of the world. This dip is so easy to make and so full of flavour. Everything goes into a blender and gets blitz to how you want the consistency. I like it chunky but my partner prefers it like soup!! This is a quick dish for tortilla and chips and ideal for finger food. This is diabetic safe.

Ingredients
- 15 oz black beans drained, rinsed
- 1 small onion coarsely chopped
- 1 small red bell pepper coarsely chopped
- 1 clove garlic chopped
- 1 tbsp red wine vinegar
- 1 tbsp olive oil
- 1/2 tsp sugar
- black pepper to taste
Instructions
