Caramelized Apple and Yoghurt Dessert is a refreshing dessert which is perfect after a heavy meal. It cleanses the palette and is light and delicate. There are only a few ingredients but they all work perfectly in harmony with very little effort. Serve as a dessert or for breakfast/brunch. I add a little cinnamon for that spice and warmth hit which is just enough without being too much.
You can add layers of apple and yoghurt but also a number of other ingredients can be included. Try soaking sultanas in a little brandy or cognac for an adult version. Or smash up biscuits and make layers between the yoghurt and apple. My favourite is ginger nuts for that extra crunch and flavour. However shortbread and plain cookies well well as well.
With Caramelized Apple and Yoghurt Dessert you can also use a flavoured yoghurt such as strawberry. This goes very well with the apple and my grandchildren love it. Also try adding a different topping . Crushed pecans or walnuts, toasted almonds or a drizzle of maple syrup.
I make the apple up to 2 days in advance and store in an air tight container in the fridge. If your using biscuits then the dish can be constructed in advance as well just clingfilm the top tightly. If you have other fruit that is ripe, try using it instead of apples. Pears work perfectly for example.
Caramelized Apple and Yoghurt Dessert
Ingredients
- 4 large apples pink lady/gala
- 60 g unsalted butter
- 110 g brown sugar light
- 1 tsp ground cinnamon
- ½ tsp nutmeg
- ½ medium lemon juice only
- 500 g Greek yoghurt
Instructions
- Core the apples and chop the rest into small cubes.
- Place a saucepan over a medium low heat and add the unsalted butter. Once melted, add the apples and lemon juice and cook for 10 minutes or until the apple cube are soft but not mush.4 large apples, 60 g unsalted butter, ½ medium lemon
- Add the sugar, nutmeg and cinnamon and gently stir in. Continue to cook until the sugar has fully melted. Remove from the heat and allow to cool fully.1 tsp ground cinnamon, ½ tsp nutmeg, 110 g brown sugar
- When ready to assemble. Add Greek yoghurt to each glass and then a spoonful of the apple and repeat until the glasses are full making sure that there is a topping of apple.500 g Greek yoghurt
- Place in the fridge until required and serve direct to the table.
