- 3 tbsp cornflour optional, for extra crispiness
- salt to taste
- pepper to taste
- 1 litre vegetable oil for frying
- 100 g cheddar cheese grated or mozzarella or a mix
- 3 tbsp mayonnaise

- Wash the potatoes thoroughly and leave the skins on for extra flavour and texture. Cut them into thick wedge shapes and place them in a bowl of cold water for 10 minutes to remove excess starch.4 large potatoes
- Bring a pot of salted water to a boil. Parboil the potato wedges for 5–7 minutes, until slightly tender but not fully cooked. Drain and let them air dry for a few minutes.
- Toss the wedges in a light dusting of cornflour (if using), along with salt and pepper, to create a crispier texture.3 tbsp cornflour, salt, pepper
- Heat the vegetable oil in a deep pan or fryer to 180°C (350°F). Fry the wedges in small batches for 4–5 minutes, or until golden and crispy. Transfer them to a paper towel-lined plate to drain excess oil.1 litre vegetable oil
