However, Chicken Bolognese is a simple variation that is full of flavour and offer a lovely change. the lovely delicate chicken is diced and so has a chunkier bite to it. Apart from that, its the same. This main dish is ready within 35 minutes anytime of the week and ideal for families
Chicken Bolognese
A slightly different take on an Italian classic. The chicken adds a slightly different texture that makes a good change to the norm. I don't tell the family I have changed the protein and they always claim how good it taste. My little secret I think.

Ingredients
- 3 large Chicken Breasts cubed
- 4 button mushrooms chopped
- 30 oz chopped tomatoes
- 1 medium white onion chopped
- 1 tbsp vegetable oil
- 2 cloves garlic finely chopped
- 1/2 tsp sugar
- 1/2 tsp Italian seasoning
- 4 cups rotini pasta
- 1/4 cup Parmesan
Instructions
- Heat oil in a large skillet over medium heat.1 tbsp vegetable oil
- 3 large Chicken Breasts, 1 medium white onion, 2 cloves garlic
- Stir in the chopped tomatoes, mushrooms and Italian seasoning.4 button mushrooms, 30 oz chopped tomatoes, 1/2 tsp Italian seasoning
- Cook for about 5 minutes, stirring frequently.
- Reduce heat and stir in the sugar.1/2 tsp sugar
- Simmer for at least 15 minutes.
- Meanwhile, bring a large pot of lightly salted water to a boil; add rotini pasta and cook until al dente.4 cups rotini pasta
- Drain and serve topped with the chicken mixture and grated Parmesan cheese.1/4 cup Parmesan
