When you mix delicious creamy sauce with succulent chicken breasts you end up with Chicken Dijon. This has to be one the favourites in my house. It is a simple recipe of mixing the “wet” ingredients together and covering the breasts! Using mayonnaise, Dijon mustard, parmesan cheese and paprika turn a normal chicken breast into a dish that is full of flavour. Served with a simple Boiled Potatoes with Herbs or Bubble and Squeak with Green Beans and Bacon (Slow Cooked) for a superb meal. Also this recipe uses ingredients a lot of people will have in their cupboards and fridges. It is classed as “Even I can do it” to cook so must be easy.

Ingredients
- 1/4 cup almonds blanched , sliced, 60 ml
- 2 tbso Dijon mustard 30 ml
- 2 tbsp mayonnaise 30 ml
- 2 tbsp Parmesan grated, 30 ml
- 4 large Chicken Breasts boneless skinless
- Salt to taste
- paprika to taste
Instructions
- Place the chicken between to pieces of wax paper or plastic wrap and pound to a thickness of about 1/2 inch (1 cm).
- Place the chicken on a lightly greased baking sheet and bake in a preheated 350F (180C) oven for 20 minutes.
- Sprinkle with the sliced almonds and cook an additional 10 minutes.
