Ingredients
- 1 1/2 cups unbleached white flour
- 1 cup whole wheat flour
- 2 tsp baking powder
- 2 tsp cinnamon
- 2 large eggs beaten
- 1/4 cup sugar
- 1/2 cup unsweetened applesauce
- 2 tbsp canola oil
- 1/4 cup orange juice
- 1 tsp orange extract
- 1 cup cranberries
Instructions
- Preheat the oven to 350 degrees. Combine the flours, baking powder, and cinnamon in a medium bowl. Set aside.1 1/2 cups unbleached white flour, 1 cup whole wheat flour, 2 tsp baking powder, 2 tsp cinnamon
- In a large bowl, combine the remaining ingredients. Add the dry ingredients slowly to the large bowl and mix until blended. Do not over beat.2 large eggs, 1/4 cup sugar, 1/2 cup unsweetened applesauce, 2 tbsp canola oil, 1/4 cup orange juice, 1 tsp orange extract, 1 cup cranberries
- Pour the batter into 12 nonstick muffin cups and bake for 20 to 25 minutes. Remove muffins from oven and let cool slightly. Remove muffins from pan and let cool completely.
- Comments: This muffin will perk you up every morning.
