Greek Skewered Shrimp – Garides Souvlakia

Everybody loves shrimp. However add lemon juice and parmesan cheese and you have Greek Skewered Shrimp – Garides Souvlakia. When the shrimp are grilled, and the parmesan is melted, you have the perfect skewered shrimp. Also, these work so well on the bbq and will have people queuing for them. Traditionally, you should be using kefalotyri cheese but it is quite difficult to find where I live so use parmesan instead. I have included these as either a starter or a canapes. I don’t include as a main dish because no matter how many I make, they have always been eaten before the course.

  • Thread the shrimp on wooden skewers, putting 3 to 4 on each skewer.
  • Sprinkle with the lemon juice, olive oil, and the cheese.
  • Cook under a preheated broiler until firm and opaque, about 2 minutes per side.
