Parsley Tomatoes are a simple side dish that is refreshing and tasty and goes with most dishes. Serve as a side dish or a starter, the tomatoes are so full of flavour. The traditional trick of adding salt to bring out the flavour is expanded with red wine and olive oil. This recipe is a through back to the 1970’s but some things just never fade.

Ingredients
- 1 1/2 lbs cherry tomatoes ripe
- 1 tbsp Extra Virgin olive oil
- 1 tbsp red wine
- 1 clove garlic finely chopped
- 3 tbsp parsley finely chop
- salt
Instructions
- Remove the stems from the tomatoes and cut each in half.1 1/2 lbs cherry tomatoes
- Combine with the remaining ingredients in a mixing bowl and toss gently to coat the tomatoes.
- Arrange on a serving platter with cocktail sticks for guests to serve themselves or as a side dish for the main course.
- Serve with toast or crackers.
