Penne all’Arrabbiata is a stunning Italian dish that has few ingredients but when combined create a superb main dish. I use this vegetarian recipe when I’m in a rush or too tired to cook anything complicated. The salt bring out the flavour of the tomatoes amazingly with the hot pepper flakes providing the heat element. Served hot with a sprinkling of parmesan cheese for a truly delicious meal.

  • Heat the oil in a skillet large enough to hold the cooked pasta and saute the garlic and red pepper flakes until the garlic is golden brown, about 5 minutes.
    1/4 cup Extra Virgin olive oil, 4 cloves garlic, Hot red pepper flakes
  • Add the tomatoes, salt, and pepper and cook uncovered, stirring occasionally, for 15 minutes.
    15 oz plum tomatoes, salt, ground black pepper
  • Add the cooked pasta and toss to coat with the sauce.
    1 lb penne
  • Sprinkle with Parmesan and serve immediately.
