Ingredients
- 1/4 cup Extra Virgin olive oil 60 ml
- 4 cloves garlic finely chop
- 30 oz plum tomatoes drain/chop, 425 g
- 1 lb penne cooked, 450 g
- parmesan cheese grated
- Hot red pepper flakes to taste
- salt to taste
Instructions
- Heat the oil in a skillet large enough to hold the cooked pasta and saute the garlic and red pepper flakes until the garlic is golden brown, about 5 minutes.
- Add the tomatoes, salt, and pepper and cook uncovered, stirring occasionally, for 15 minutes.
- Add the cooked pasta and toss to coat with the sauce.
- Sprinkle with Parmesan and serve immediately.
