Mustard and Lemon Sauce

Mustard and Lemon Sauce is one of my go to recipes when I’m cooking fish. This lovely recipe uses Dijon mustard with chicken stock/broth and lemon juice to create a silky tasty sauce. This also works really well with vegetables. Alternatively add shallots to this sauce and it was amazing with beef.

  • In a medium saucepan melt the butter. Add the flour
    3 oz butter, 3 tbsp flour
  • Cook for 3 minutes. Stir constantly
  • Pour in the broth. Simmer from 5 to 6 minutes.
    12.5 oz chicken broth
  • Stir constantly
  • Remove from heat and whisk slightly the egg yolks
    3 large egg yolks
  • Add the lemon juice and mustard and stir well
    2 tbsp lemon juice, 2 tbsp Dijon mustard
  • Put the sauce pan on heat and let cook for 2 minutes
  • Add cayenne and salt to taste
    Cayenne, Salt
