Spicy Peanut sauce is a dipping sauce and marinade that every home chook needs in their repertoire. It is a perfect partner for most meat, especially chicken. However, it also can be used as a dipping sauce for sliced vegetables. It is often used to add flavour to grilled skewered meat such as satays, poured over vegetables as salad dressing such as in dipping sauces for spring rolls. I use chillies in this recipe but you can also use cayenne pepper. Mixed with the molasses, garlic, shallots and soy sauce are ground peanuts. However, this creates a Spicy Peanut Sauce mixture that is amazing in flavour, kick and texture.

  • Heat the oil in a heavy skillet and cook the shallots and garlic 3 to 4 minutes, until tender but not brown.
  • Add the chicken stock and bring to a boil over high heat.
  • Add the ground peanuts, soy sauce, molasses, lime juice, ginger, and chilies or cayenne.
  • Reduce the heat and simmer for 10 minutes, stirring occasionally.
  • Allow to cool slightly before serving.

Notes

The words OMG spring to mind. This is devine with chicken!!!!
Note:
If you prefer, you can have cayenne pepper instead of chillies.
