Texas Style Chilli is a recipe an old friend of my family gave me years ago. He ate this every week and lived to 104 so can’t be too bad for you. It is a little hot but that’s how I like it but adjust the chilli powder until you get your level. Serve as a main dish with crackers for a warming dish all year round. Beautiful.

Ingredients
- 3 1/2 lb Beef Chuck
- 1/4 cup Salad oil
- 2 cup onion chopped
- 3 medium green peppers diced
- 16 oz tomatoes
- 4 cloves garlic
- 2 oz tomato paste
- 1/4 cup chili powder
- 1/4 cup sugar
- 2 tsp Salt
- 2 tsp oregano
- 3/4 tsp Pepper
- 1/2 cup monterey jack
Instructions
- Cut steak into 1/2 inch cubes.3 1/2 lb Beef Chuck
- Reserve 1/2 cup onions- cover-set aside.
- Add remaining onions, peppers, and garlic to drippings in pan over a medium heat.2 cup onion, 3 medium green peppers, 4 cloves garlic
- Cook 10 minutes stirring occasionally.
- Add more oil if necessary.
- Return meat to pan add tomatoes and their liquid and remaining ingredients, except cheese and onions.
- Heat to boiling. Reduce heat to low, cover and simmer 1 1/2 hours or until meat is fork tender, stirring occasionally.
- Spoon chili into large bowl sprinkle cheese on top for garnish.1/2 cup monterey jack
- Pass reserved onion to sprinkle over each serving.2 cup onion
