  • Combine the flour, paprika, thyme, salt, and pepper in a plastic bag.
    1/4 cup all-purpose flour, 1 tbsp paprika, 1 tsp dried thyme, salt
  • Add the beef to the flour mixture and toss to coat.
    2 lbs stewing beef
  • Heat the oil in a large skillet over moderate heat and brown the beef on all sides.
    1 tbsp vegetable oil
  • Transfer the beef to the slow cooker with a slotted spoon.
  • Add the remaining ingredients and cook covered on low heat for 8 to 10 hours.
    3 cups beef stock, 1 cup tomato sauce, 2 large onions, 2 large carrots, 2 ribs celery, 2 medium potatoes, 1 whole bay leaf, ground pepper
  • Remove the bay leaf before serving.
