Ingredients
- 2 tbsp Vegetable oil 30 ml
- 2 cloves garlic finely chopped
- 1/4 tsp ground cumin 1 ml
- 3 cups pinto beans 750 ml, cooked and drained
- Monterey jack grated
- Salt to taste
- ground pepper to taste
Instructions
- Heat the fat in a skillet over moderate heat and saute the garlic and cumin for 2 to 3 minutes.
- Add the beans and mash with a potato masher or fork until thoroughly mashed.
- Season with salt and pepper and simmer uncovered for 5 to 10 minutes.
- Serve topped with grated cheese.
