Ingredients
- 4 large eggs poached
- 6 rashers bacon
- 1/2 lb mild greens,
- 2 tbsp chives chopped
- 2 tbsp red wine vinegar
- 2 tbsp olive oil
- 1 pinch salt to taste
- 1 pinch ground pepper to taste
Instructions
- Heat the olive oil in a small saucepan over moderate heat and saute the bacon until almost crisp.2 tbsp olive oil, 6 rashers bacon
