Ingredients
- 12 large shrimp peeled and deveined
- 1 tbsp olive oil
- 1 medium lime juice only
- 1 clove garlic minced
- 1/2 tsp chilli powder optional, for heat
- salt to taste
- pepper to taste
- 1 medium ripe avocado
- 1 small red chilli finely chopped
- 1 tbsp lime juice
- 1 large cucumber sliced into 12 rounds
Instructions
- In a small bowl, combine olive oil, lime juice, garlic, chilli powder (if using), salt and pepper. Add shrimp, toss to coat, and let marinate for 10 minutes.1 tbsp olive oil, 1 medium lime, 1 clove garlic, 1/2 tsp chilli powder, salt, pepper
- In a separate bowl, mash the avocado until smooth. Stir in the chopped chilli, lime juice, salt, and pepper to taste. Set aside.salt, 1 medium ripe avocado, 1 small red chilli, 1 tbsp lime juice, pepper
- Heat a non-stick skillet over medium heat. Add the marinated shrimp and cook for 2-3 minutes on each side, until pink and fully cooked. Remove from heat and let cool slightly.12 large shrimp
- Place cucumber slices on a serving platter. Top each slice with a spoonful of avocado mixture. Place a shrimp upright on top of each avocado layer. Garnish with extra chilli or herbs if desired.1 large cucumber
