  • Prepare the Dough: In a large mixing bowl, combine the sourdough starter, bread flour, lukewarm water, salt, and honey or sugar. Mix until a shaggy dough forms.
    400 g active sourdough starter, 500 g bread flour, 300 ml water, 1 tsp salt, 1 tbsp honey
  • Knead the Dough: Turn the dough out onto a lightly floured surface and knead for about 10 minutes, or until the dough is smooth and elastic.
  • First Rise: Place the dough in a lightly oiled bowl, cover with a clean kitchen towel or plastic wrap, and let it rise at room temperature for 4-6 hours, or until doubled in size.
  • Shape the Rolls: Once the dough has doubled in size, punch it down to release any air bubbles. Divide the dough into 12 equal portions and shape each portion into a ball.
  • Second Rise: Place the dough balls on a baking tray lined with parchment paper, leaving some space between each roll. Cover with a clean kitchen towel or plastic wrap and let them rise for another 2-3 hours, or until puffy.
  • Preheat the Oven: About 30 minutes before the rolls are done rising, preheat your oven to 200°C (400°F).
  • Top with Flax Seeds: Once the rolls have finished rising, lightly brush the tops with water and sprinkle with flax seeds.

  • Bake: Place the rolls in the preheated oven and bake for 20-25 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
  • Cool and Enjoy: Allow the rolls to cool on a wire rack for a few minutes before serving. Enjoy warm with butter, or use them as the perfect base for sandwiches.
