Spicy Omelette with Mushrooms is a dish that I always prepare when in a rush. It doesn’t matter if it breakfast, brunch, snack or just a main dish. Is It is filling and ever so tasty. The mushrooms and peppers, cheddar cheese and a hit of tabasco sauce combine with the egg to create paradise.

Ingredients:

  • 5 large eggs, free range
  • 100g mushrooms, clean/sliced
  • 1/3 cup onions, dice
  • 1/3 cup green bell peppers, dice
  • 1/3 cup red bell peppers, dice
  • 1 small green chili, finely chopped
  • 1 tsp tabasco sauce
  • 1/4 tsp cayenne pepper (for an extra kick)
  • Salt, to taste
  • Ground black pepper, to taste
  • 2 tbsp olive oil
  • 1/3 cup cheese, shredded
  • cilantro, coriander/chop/garnish

Instructions:

  1. Heat one tablespoon of olive oil in a non-stick skillet over medium heat.
  2. Add the diced onions and bell peppers to the skillet and sauté until they are soft and translucent, about 3-4 minutes.
  3. Add the sliced mushrooms to the skillet and continue cooking until they are tender and golden brown, about 5-6 minutes.
  4. While the vegetables are cooking, crack the eggs into a bowl and beat them lightly with a fork or whisk. Season with salt, black pepper, and cayenne pepper.
  5. Once the mushrooms are cooked, transfer them to a plate and set aside. Wipe the skillet clean with a paper towel.
  6. Return the skillet to the heat and add the remaining tablespoon of olive oil. Once hot, pour in the beaten eggs, swirling the pan to spread them evenly.
  7. Allow the eggs to cook undisturbed for a minute or two until the edges start to set.
  8. Sprinkle the sautéed mushrooms, onions, bell peppers, and chopped green chili evenly over one half of the omelette.
  9. If using cheese, sprinkle it over the vegetables.
  10. Carefully fold the other half of the omelette over the filling using a spatula.
  11. Let the omelette cook for another minute or until the cheese is melted and the eggs are fully cooked through.
  12. Slide the omelette onto a plate and garnish with chopped fresh cilantro or parsley.
  13. Serve hot with toast or your favorite breakfast sides.

  • Melt butter/oil in a large, heavy frying pan.
    2 tbsp unsalted butter
  • Add jalapeno peppers, green peppers, red peppers and onions and saute until onions become transparent.
    1 medium jalapeno pepper, 1/3 cup green peppers, 1/3 cup red peppers, 1/3 cup onion
  • Season with salt, pepper, Tabasco and cilantro.
    1 tsp Tabasco sauce, 1/2 tsp salt, 1/4 tsp pepper, 1 tsp cilantro
  • Add a separate pan to the stove and pan fry mushrooms in a little butter and a pinch of salt and when cooked, put to one side to keep warm
    100 g mushrooms
  • Beat eggs with 1 Tablespoon of water and slowly pour throughout the sauteed mixture.
    5 large eggs
  • Simmer covered over low heat until the eggs are set.
  • Add cheese to one side and carefully flip the other side over.
    1/3 cup cheddar cheese
  • Remove from heat and cover for an additional minute to melt the cheese completely.
