  • In a large bowl, whisk the double cream, mascarpone, sugar, and vanilla extract until smooth and slightly thickened. Set aside.
    300 ml double cream, 250 g mascarpone cheese, 75 g caster sugar, 2 tsp vanilla extract
  • In a shallow dish, mix the cooled espresso with the marsala wine (if using).
    300 ml espresso coffee, 100 ml marsala wine
  • Quickly dip each sponge finger into the coffee mixture, ensuring they absorb some liquid but don’t become too soggy.
    175 g sponge fingers
  • Layer the soaked sponge fingers in the bottom of a medium-sized dish (roughly 20cm square or similar).
  • Spread half of the mascarpone mixture evenly over the sponge fingers.
  • Add another layer of dipped sponge fingers on top of the mascarpone mixture.
  • Spread the remaining mascarpone mixture over the second layer of sponge fingers, smoothing it out.
  • Cover the dish with cling film and chill in the fridge for at least 4 hours or overnight.
  • Just before serving, dust the top with cocoa powder and, if desired, sprinkle some dark chocolate shavings for extra richness.

  • Add strawberries to the top of the tiramisu.
    24 large strawberries
  • Slice and serve chilled.
