Chimichurri Marinade is a popular green or red sauce that is believed to have originated in Argentina and Uruguay. It is used as a marinade but also to cook in and as a condiment. Its ingredients are mainly chopped parsley, basil and/or cilantro, garlic, olive oil, vinegar and spices and ancho powder. Ancho powder is a mild Mexican chilli which adds a lovely warmth to you dish.

  • In a blender, puree, garlic, bay leaves, jalapenos, salt and 1 tablespoon of the vinegar until a paste is formed.
    6 cloves garlic, 3 whole bay leaves, 2 fresh jalapenos, 1 1/2 tbsp Salt, 1/4 cup distilled white vinegar, 1 tbsp Ancho powder
  • Transfer to a mixing bowl and add the herbs.
    1/2 cup cilantro, 1/2 cup parsley, 1/4 cup oregano leaves
  • Whisk in the remaining vinegar and olive oil until smooth.
    1/3 cup olive oil

Notes

Asuperb Argetinian marinade that increases the flavour of meats especially chicken when left to blend overnight.
