Vegetarian Curry Pizza

Pizza Ingredients:
- 1 large pizza dough approximately 500g
- 1 tbsp olive oil
- 1 small onion thinly sliced
- 1 medium red bell pepper sliced
- 1 medium yellow bell pepper sliced
- 150 g mushrooms sliced
- 100 g broccoli cut into small florets
- 100 g sweetcorn
- 2 tsp mild curry powder
- 150 g mozzarella grated
- 50 g mature Cheddar grated
- 1 tbsp fresh coriander chopped
- salt
- freshly ground black pepper
Curry Sauce Ingredients:
- 1 tbsp olive oil
- 1 small onion finely chopped
- 2 cloves garlic finely minced
- 1 tsp mild curry powder
- ½ tsp ground cumin
- ½ tsp ground coriander
- 200 ml passata
- 100 ml vegetable stock
- 2 tbsp natural yoghurt
- salt
- freshly ground black pepper
Instructions
- Heat the olive oil in a saucepan over a medium heat. Add the finely chopped onion and cook for 4–5 minutes until softened.1 tbsp olive oil, 1 small onion
- Add the garlic, mild curry powder, ground cumin and ground coriander. Stir well and cook for about 30 seconds. This helps release the fragrance of the spices.2 tsp mild curry powder, 2 cloves garlic, ½ tsp ground cumin, ½ tsp ground coriander
- Pour in the passata and vegetable stock. Stir everything together and bring to a gentle simmer.200 ml passata, 100 ml vegetable stock
- Cook for 8–10 minutes, stirring occasionally, until the sauce thickens slightly. Remove from the heat and stir in the natural yoghurt.2 tbsp natural yoghurt
- Season with salt and black pepper, then set aside to cool slightly.salt, freshly ground black pepper
- Heat the olive oil in a large frying pan.1 tbsp olive oil
- Add the onion, red pepper, yellow pepper, mushrooms and broccoli. Cook for approximately 5–6 minutes, stirring regularly.1 small onion, 1 medium red bell pepper, 1 medium yellow bell pepper, 150 g mushrooms, 100 g broccoli
- The vegetables should soften slightly but still retain some texture. Avoid cooking them until completely soft because they will continue cooking in the oven.
- Add the sweetcorn and sprinkle over the mild curry powder. Season with a little salt and pepper.100 g sweetcorn, 1 tsp mild curry powder, salt, freshly ground black pepper
- Stir thoroughly so the curry powder coats the vegetables evenly. Cook for another minute, then remove from the heat.
- Preheat the oven to 220°C/425°F/Gas Mark 7.
- Place the pizza dough on a lightly floured surface and roll it into a large round or rectangle, depending on the tray you are using.
- Transfer the dough to a lightly oiled pizza or baking tray.
- For a particularly crisp base, allow the dough to rest for 5 minutes before adding the toppings.
- Spread the curry sauce evenly over the pizza base, leaving approximately 1–2cm around the edge for the crust.1 large pizza dough
- Scatter the curried vegetables evenly over the sauce.
- Sprinkle over the grated mozzarella, followed by the mature Cheddar.150 g mozzarella, 50 g mature Cheddar
- Try not to overload the pizza with vegetables. A generous but even layer allows the cheese to melt properly while keeping the base crisp.
- Place the pizza into the preheated oven.
- Bake for approximately 15–20 minutes, or until the crust is golden brown and the cheese has melted and developed a few golden patches.
- If you prefer a particularly crisp base, place the pizza on a preheated baking tray or pizza stone.
- Remove the pizza from the oven and leave it for 2–3 minutes before slicing.
- Scatter over the fresh chopped coriander just before serving.1 tbsp fresh coriander
- Cut into generous slices and serve while hot.
