Chocolate Chip Muesli are bars that are packed with flavour. While the recipe says chocolate chips, you can easily replace with fruit. My favourite is apricots for that lovely sweetness they provide. Serve as a snack to keep going until dinner.

Ingredients
- 125 ml honey
- 1/4 cup caster sugar
- 125 g butter
- 3 cups oats rolled
- 1 cup Rice Crispies
- 1 cup sultanas
- 1/2 cup chocolate chips or fruit/chopped
- 1/2 cup desiccated coconut
- 1/4 cup seeds
Instructions
- Preheat oven to 180°C
- Grease and line with baking parchment a large tray
- Mix the honey, sugar and butter in a saucepan over medium heat. Cook the mixture until the butter melts and sugar dissolves.125 ml honey, 1/4 cup caster sugar, 125 g butter
- Bring to the boil and cook until syrup thickens slightly.
- Remove from heat.
- Combine remaining ingredients in a large bowl.3 cups oats, 1 cup Rice Crispies, 1 cup sultanas, 1/2 cup chocolate chips, 1/2 cup desiccated coconut, 1/4 cup seeds
- Pour over the hot syrup and stir to combine.
- Spoon into prepared pan and press firmly to make sure the mixture will stick together.
- Bake in oven for 15-20 minutes or until golden
- Cool and then refrigerate until well chilled and cut into 20 slices
