Southwestern Jalapeno Cornbread Dressing is an excellent dish that is suitable with most roast meals. Normally used as a side dish. However, I have actually had this as a main dish with a light salad.

Ingredients
- 4 cups cornbread crumbled
- 10 slices bread cubed/stale
- 1 lb mild italian turkey sausage
- 1-1/2 cups celery chopped
- 1 cup onion chopped
- 1-1/2 tsp salt
- 1 tsp poultry seasoning
- 1/4 cup Jalapeno peppers seeded and chopped
- 2 large eggs free range slightly beaten
- 1 cup turkey broth
Instructions
- Preheat oven to 325.
- In large bowl combine cornbread and bread cubes.4 cups cornbread, 10 slices bread
- In large skillet, over medium-high heat, saute sausage, celery and onion until sausage is no longer pink and vegetables are tender; combine with cornbread mixture.1 lb mild italian turkey sausage, 1-1/2 cups celery, 1 cup onion
- Add salt, poultry seasoning, jalapeno peppers, eggs and turkey broth.1-1/2 tsp salt, 1 tsp poultry seasoning, 1/4 cup Jalapeno peppers, 2 large eggs, 1 cup turkey broth
- Spoon dressing into lightly greased 3-quart casserole dish. Bake, covered, at 325 degrees F. 45 to 50 minutes.
