Blueberry Orange Bread is a bread I love to have during the week as a snack at work. Unlike many other breads, it’s refreshing, filling and reminds me of a flat muffin. The orange peel and juice mixed with the blueberries creates a beautiful flavour but also a colouring of the bread. This recipe uses all bran cereal as the base but any fiber/fibre cereal will work. It add a lovely texture and is good for you.

Ingredients
- 1 cup fiber cereal fiber one/all bran etc
- 3/4 cup water
- 1 tbsp orange peel
- 1/4 cup orange juice
- 1/2 tsp vanilla
- 2 cups all-purpose flour
- 1 cup sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp Salt
- 2 tbsp vegetable oil
- 1 large eggs free range
- 1 cup blueberries can use frozen if thawed
Instructions
- Heat oven to 350 degrees. Grease bottom only of loaf pan, 9 by 5 by 3 inches.
- Crush cereal. (Place cereal in plastic bag or between sheets of waxed paper; crush with rolling pin. Or crush in blender or food processor.)1 cup fiber cereal
- Stir together cereal, water, orange peel, orange juice and vanilla in large bowl; let stand 10 minutes.3/4 cup water, 1 tbsp orange peel, 1/4 cup orange juice, 1/2 tsp vanilla
- Stir in remaining ingredients except blueberries.2 cups all-purpose flour, 1 cup sugar, 1 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp Salt, 2 tbsp vegetable oil, 1 large eggs
- Gently stir in blueberries. Pour into pan.
- Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf; remove from pan.
- Cool completely before slicing.
