Just imagine walking through the front door and smelling the glorious aroma or a Thai Green Curry – Big L’s. A bad day becomes good. The taste of this dish is perfectly Thai with the warm undertones and moist chicken. Then you have the sauce which I would happily drink out of a glass. The mixture of coconut milk, chillies, kaffir leaves and fish sauce makes this so immense. Serve as a main dish on a bed of boiled rice for a classic meal.

Green curry is a Central Thai variety of curry. A lovely subtle flavoured curry that you will ask for again.

Ingredients
- 1 1/2 tbsp oil
- 2 tbsp green curry paste
- 8 oz chicken breast
- 1/2 cup coconut milk
- 1 tbsp fish sauce
- 1/2 cup water
- 4 oz bamboo shoots
- 5 whole kaffir lime leaves
- 2 medium red chilies
- 1 tbsp sugar
- 4 whole Thai basil leaves
Instructions
- Heat the oil in a pan over a medium heat1 1/2 tbsp oil
- Cut the chicken breasts into slices8 oz chicken breast
- Saute the green curry paste until aromatic, add the chicken and stir to combine well with the curry paste.2 tbsp green curry paste
- 1/2 cup coconut milk, 1/2 cup water
- Put a pan on to cook the rice per packet instructions
- Add the kaffir leaves, red chilies and bean shoots. Lower the heat to simmer, cover the pot and let simmer for 10 – 20 minutes or until the curry slightly thickens.
- Turn off the heat and serve immediately with rice.
