Ingredients
- 225 g unsalted butter softened
- 200 g granulated sugar
- 150 g light brown sugar
- 2 large eggs free range
- 1 tsp vanilla extract
- 300 g plain flour
- 1 tsp baking soda
- 1 tsp salt
- 300 g chocolate chips milk/dark, or a mix
Instructions
- Preheat your oven to 180°C (160°C fan)/350°F/Gas Mark 4. Line two baking trays with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy. This should take about 2-3 minutes with an electric mixer.225 g unsalted butter, 200 g granulated sugar, 150 g light brown sugar
- Beat in the eggs one at a time, making sure they are fully incorporated before adding the next. Stir in the vanilla extract.2 large eggs, 1 tsp vanilla extract
- In a separate bowl, whisk together the flour, baking soda, and salt.300 g plain flour, 1 tsp baking soda, 1 tsp salt
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
- Fold in the chocolate chips, ensuring they are evenly distributed throughout the dough.300 g chocolate chips
- Using a tablespoon or a cookie scoop, drop spoonful’s of dough onto the prepared baking trays. Make sure to leave enough space between each cookie, as they will spread during baking.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centres are still soft.
- Allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
