Penne Caprese is one of those main dishes that every parent should know. It is fast and simple to cook with few ingredients. Yet the flavours of the Mozzarella, fresh ripe tomatoes and penne will always result is a superb dish. I serve this with a plain salad for a balance meal that even the children enjoy. Also, it is also ready within 15 minutes and I often add a quick grate of parmesan for an additional flavour. Like so many Italian recipes, they create amazing flavours quickly and with fewer ingredients than you would imagine. Add a few slices of chili for that extra kick.

Ingredients
- 2 cups tomatoes 500 ml, ripe, chopped
- 1/4 cup Extra Virgin olive oil 60 ml
- 1/2 lb penne 225 g
- 6 oz Mozzarella 170 g, 1 cm cubes
- 1/4 bunch basil chopped
- salt to taste
- ground pepper to taste
Instructions
- Cook the pasta in boiling water.
- Mix the tomatoes, oil, salt, and pepper in a bowl and toss to combine.
- Add the remaining ingredients
- Toss to combine
- Serve immediately
