Penne Caprese is one of those dishes that every parent should know. It is fast and simple to cook with few ingredients. Yet the flavours of the Mozzarella, fresh ripe tomatoes and penne will always result is a superb dish. I serve this with a plain salad for a balance meal that even the children enjoy. Also, it is also ready within 15 minutes and I often add a quick grate of parmesan for an additional flavour. Like so many Italian recipes, they create amazing flavours quickly and with fewer ingredients than you would imagine. Add a few slices of chili for that extra kick.
- Cook the pasta in boiling water.
- Mix the tomatoes, oil, salt, and pepper in a bowl and toss to combine.

- Toss to combine
- Serve immediately
