Carrot and Orange Bisque is a simple soup that combines the flavours of vegetables and fruit. The result is a warming welcoming dish. It can be used as a starter, snack and warming treat on a cold winters day.
Whilst I have used chicken stock in the recipe, you can use vegetable stock to make it into a vegetarian dish. Also, when you serve this bisque with bread, your have a main course dish.
I have used a slow cooker in this recipe that works so well. However, I have made this using a standard saucepan to great success. Obviously, you have to keep stirring it but it doesnt take any where as long. Carrot and Orange Bisque is an ideal dish, colour wise for Christmas.

Ingredients
- 2 lbs carrots coarsely chopped, 900 g
- 1 large orange Juice and zest only
- 6 cups chicken stock 1-1.5 L
- 1 medium onion finely chopped
- 1/2 cup heavy cream 125 ml
- salt to taste
- ground pepper to taste
Instructions
- Combine all ingredients except the cream in the slow cooker and cook covered on low heat for 10 to 12 hours, or on high heat for 4 to 6 hours.
- Puree the soup in an electric blender or food processor.
- Stir in the cream.
- Serve immediately
