Tortellini are pasta originally from the Italian region of Emilia (in particular Bologna and Modena). Traditionally they are stuffed with a mix of meat (pork loin, raw prosciutto, mortadella), parmesan, egg and nutmeg. It is often served in capon broth, a beef stock.
