Fresh Corn Fritters are flat pancake like fritter made fresh from the cob. They are a perfect addition to meals an like other fritters have a crunchy coating over a soft centre. These are amazing simple to prepare and ideal served as a side dish and snacks. This recipe is a good way of using spare up sweetcorn. It doesn’t matter if its on the cob or tinned, they both work.

Ingredients
- 6 large sweet corn husked
- 3 large egg whites stiffly whipped
- salt to taste
- ground black pepper to taste
Instructions
- Cut the corn kernels from the cobs, scraping the cobs and reserving as much of the liquid as possible.6 large sweet corn
