Hot Avocado Dip is a simple yet wonderful dish. Combining the fresh ripe avocado with the finely chopped onion and celery gives so much body and texture. However by then adding crab meat (either fresh or canned) takes this to an entirely new level. Especially when you bake it and serve it hot with tortillas or other dippers. This is one of my favourite dips to serve and when included as a canapes, it is always the first to go. This also has the benefit of being prepared in advance and then baked when needed. Also, Hot Avocado Dip is ideal when the buffet needs to be on the warmer side.

Ingredients
- 1/2 cup mayonnaise
- 1 tbsp lemon juice
- 2 tbsp celery finely chopped
- 1 dash paprika
- 1 tbsp onion finely chopped
- 6 oz crab meat fresh or canned
- 3 large avocados cut in half, pit removed
- salt to taste
Instructions
- Combine the mayonnaise, lemon juice, celery, salt, paprika, onion and crab meat in a bowl and stir to mix well.1/2 cup mayonnaise, 1 tbsp lemon juice, 2 tbsp celery, 1 dash paprika, 1 tbsp onion, salt, 6 oz crab meat
- Spoon into the hollow of the avocado halves and place on a baking sheet.3 large avocados
- Bake in a preheated 375F (190C) oven for 10 minutes, until warm through.
