  • Heat the oil in a wok over medium heat. Add the garlic, ginger and chopped chillies. Stir for 1–2 minutes until fragrant.
    3 tbsp vegetable oil, 4 cloves garlic, 1 tbsp fresh ginger, 2 medium red chillies
  • Add the chilli paste next. Cook it for another minute while stirring, so the flavours deepen.

  • Stir in the ketchup, sweet chilli sauce, soy sauce and sugar. Mix well to form a thick base.

  • Pour in the water or stock. Bring the mixture to a gentle simmer.

  • Cover the wok and cook for 10–12 minutes. Stir occasionally to ensure even cooking. The shells should turn bright red.
  • Remove the lid and taste the sauce. Adjust seasoning with salt and pepper if needed.
