Marinated Barbecue Chicken

One of my favourite summer dishes has to be Marinated Barbecue Chicken. These succulent pieces of chicken, infused with a blend of spices and cooked to perfection on the grill/bbq, are sure to be a hit at any gathering. Here’s a straightforward guide to making delicious marinated barbecue chicken, along with some suggestions for what to serve alongside them.
The Marinade
The secret to truly flavourful barbecue chicken breasts lies in the marinade. A good marinade not only imparts a delicious taste but also helps to keep the chicken moist during cooking. For a simple yet effective marinade, you’ll need the following ingredients:
4 boneless, skinless chicken breasts.
4 tablespoons olive oil
2 tablespoons soy sauce
2 tablespoons lemon juice
3 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon smoked paprika
Salt and black pepper to taste
Preparing the Chicken
Mix the Marinade: In a bowl, combine the olive oil, soy sauce, lemon juice, minced garlic, oregano, smoked paprika, salt, and pepper. Stir well to ensure all ingredients are evenly mixed.
Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish, then refrigerate for at least 2 hours, or overnight for the best results.
Barbecuing the Chicken
Preheat the Grill: Preheat your barbecue grill to medium-high heat.
Grill the Chicken: Remove the chicken breasts from the marinade and place them on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F). Make sure to turn the chicken occasionally to prevent burning and to ensure even cooking.
Rest the Chicken: Once cooked, let the chicken breasts rest for a few minutes before serving. This allows the juices to redistribute, making the chicken even more tender and juicy.
What to Serve with Barbecue Chicken
Marinated barbecue chicken breasts pair wonderfully with a variety of side dishes. Consider serving them with a fresh garden salad, grilled vegetables, or a classic coleslaw. For a heartier meal, you could add potato salad or corn on the cob. Additionally, a side of garlic bread or a light, fluffy rice pilaf can complement the smoky, savoury flavours of the chicken perfectly.
In summary, marinated barbecue chicken breasts are a delightful addition to any meal. With a simple marinade and careful grilling, you can enjoy tender, flavourful chicken that will impress your family and friends. Serve with your favourite sides, and you’ve got a winning summer dish.
