  • Preheat your oven to 200°C (180°C fan) 400°F or Gas Mark 6.
  • Season the chicken breasts with salt, pepper, smoked paprika, and oregano. Set aside.
    4 large chicken breasts, 1 tsp smoked paprika, salt, pepper, 1 tsp dried oregano
  • In a large ovenproof pan, heat the olive oil over medium heat. Add the diced aubergine and cook for about 5-7 minutes, until softened and slightly browned.
    1 tbsp olive oil, 1 large aubergine
  • Add the minced garlic to the pan and sauté for 1 minute. Then, add the halved baby tomatoes and sliced olives, stirring to combine.
    200 g baby tomatoes, 2 cloves garlic, 100 g pitted black olives
  • Push the vegetables to the side of the pan and place the seasoned chicken breasts in the centre. Cook for 2-3 minutes on each side, until lightly browned.
  • Transfer the pan to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and no longer pink in the centre.
  • Remove the pan from the oven and let the dish rest for a few minutes. Garnish with freshly chopped coriander before serving.

  • Serve the Mediterranean Chicken hot, with the roasted vegetables alongside. This dish pairs beautifully with a side of couscous or a fresh green salad.

Notes

Chicken legs also work well in this recipe but you do need to adjust for the cooking time as legs take longer than breasts.
