Provencale Tarts are a thing of beauty. My mother made these for decades and I always loved them. They only have 4 ingredients but when served as a snack or in a picnic it tastes a lot more. For a fast, fancy edge, use a fluted pastry wheel to cut the puff pastry for these elegant cheese appetizers. These are delicate pastries but wonderful.
