Quick Brown Sauce is an essential in my household. I found this sauce recipe years ago and have been using it since with no complaints. Its very easy and quick to prepare and ready in only 15 minutes. I like to play with the recipe and have added red chillies or a shot of tabasco or Worcestershire Sauce.

Quick Brown Sauce
Serve with meats or other dishes or use as base for Bordelaise sauce.

Ingredients
- 3 tbsp butter
- 3 tbsp flour
- 1 1/2 cups vegetable stock
- 1/2 tsp thyme
- 1 sprig parsley
- 1 pinch salt
- 1 pinch ground pepper
Instructions
- Melt the butter in a heavy saucepan over low heat. Add flour and blend well over medium heat. Reduce heat and simmer for several minutes.3 tbsp butter, 3 tbsp flour
- Heat bouillon or stock, stir into the roux (flour and butter mixture) and continue stirring until sauce thickens.1 1/2 cups vegetable stock
- Add herbs, reduce heat and simmer for several minutes.1/2 tsp thyme, 1 sprig parsley
- Taste and adjust seasoning as required.
