Quick Brown Sauce is an essential in my household. I found this sauce recipe years ago and have been using it since with no complaints. Its very easy and quick to prepare and ready in only 15 minutes. I like to play with the recipe and have added red chillies or a shot of tabasco or Worcestershire Sauce.

Serve with meats or other dishes or use as base for Bordelaise sauce.

  • Melt the butter in a heavy saucepan over low heat. Add flour and blend well over medium heat. Reduce heat and simmer for several minutes.
    3 tbsp butter, 3 tbsp flour
  • Heat bouillon or stock, stir into the roux (flour and butter mixture) and continue stirring until sauce thickens.
    1 1/2 cups vegetable stock
  • Add herbs, reduce heat and simmer for several minutes.
    1/2 tsp thyme, 1 sprig parsley
  • Taste and adjust seasoning as required.
