Quick Vodka Pasta

Quick Vodka Pasta is a simple Italianish recipe with a kick. The vodka adds a different dimension to the usual recipe but works incredibly well. I try to use chorizo but if not smoked back bacon is an ideal substitute. Served as a main dish every time, it is filling, quick, simple and so very tasty. This is a must try recipe.

  • Place a frying pan over a medium heat and add the oil.
    2 tsp olive oil
  • When hot, add the chorizo/smoked bacon and fry for about 2 minutes until the fat/oil starts to render.
    50 g chorizo
  • Add the shallots and cook for a further 5 minutes.
    4 large banana shallots
  • Add the garlic and chilli (deseeded if you wish to make it less intense) and cook for another minute or so.
    2 cloves garlic, 1 whole red chilli
  • Add a pan of water over a high heat and add salt.
  • When the water is boiling, cook the pasta according to the instructions.
    200 g linguine
  • Once cooked, drain the pasta over a mug to catch some of the pasta water.
  • Add the tomato puree to the shallot, garlic etc mixture and combine.
    40 g tomato purée
  • Cook for an additional minute and then add the all important vodka.
    3 tbsp vodka
  • Allow to simmer/bubble for 30 seconds and add the cream.
    80 ml double cream
  • Reduce the heat to a gentle simmer and cook for a final 3 – 4 minutes.
  • Add the lemon zest and test for seasoning. Add salt and ground pepper if required.
    1 fresh lemon
  • The pasta should be cooked by now so add it to the sauce mixture.
  • If the sauce needs thinning, add a little of the pasta water.
  • Bring back to a simmer for 2 minutes then serve
  • Grate parmesan over the pasta and a scattering of parsley.
    ½ bunch parsley, 15 g parmesan
  • Enjoy.
