Five words that belong together – White Chocolate Cherry Mousse Cheesecake. When these combine you know its going to be amazing. I first had White Chocolate Cherry Mousse Cheesecake at a friends house whose mum was an amazing cook. That was 40 years ago and I can still remember how it tasted. This only takes 15 minutes from start to finish and can be used as a dessert or a snack. It has been known for me to have a slice as dessert and then have a snack a bit later. The addition of cherries is a superb idea but you can adjust it for other seasonal fruits.

Ingredients
- 9 oz White chocolate
- 3 ts gelatine powder
- 1 qt whipping cream
- 8 oz sugar
- 2 lb cream cheese
- 4 oz caramel cookies crumbled
- 4 oz shortbread cookies crumbled
- 4 oz praline cookies crumbled
- 6 oz cherries sun dried
- 1 oz butter melted
Instructions
- Melt chocolate.9 oz White chocolate
- Dissolve gelatin with 1 ounce of water.3 ts gelatine powder
- Place cream cheese and sugar in mixing bowl. Use medium speed for about 10 minutes.2 lb cream cheese, 8 oz sugar
- When mixture is soft and creamy add melted white chocolate and gelatin. Mix for two minutes.
- Add whipped cream and sundried cherries.1 qt whipping cream, 6 oz cherries
- To assemble: Grease a 10-inch mold with butter and cover sides with the Shortbread crumbles.4 oz shortbread cookies, 1 oz butter
- Pour Caramel cookie crumbles on bottom, then pour the cheesecake mixture over the first layer of cookies.4 oz caramel cookies
- On top of that pour the Praline cookie mixture.4 oz praline cookies
- Alternate the cheese and cookie layers.
Notes
Brilliant change to the normal cheesecake by adding cherries.
