This is such a good method of making a small amount of salmon go a long way. A Salmon Loaf will serve four people easily when served with fresh vegetables such as Bravo Green Beans, Boiled Potatoes with Herbs and Broccoli with Sesame Seeds. This is a dish that will surprise and satisfy your family and friends. One of the benefits of this recipe is that you chop and mix the ingredient. Then just put in in the baking tin and cook it for an hour; that is it. I have also had this on fresh homemade bread as a pate – it really works with marinated cucumbers.

Ingredients
- 16 oz salmon can
- 10 3/4 oz cream of celery soup can
- 1 cup bread crumbs dry
- 2 large eggs beaten
- 1/2 cup onion chopped
- 1 tsp lemon juice only
Instructions
- Drain salmon, reserving 1/4 cup liquid. Remove any skin and bones.
- Combine all ingredients, including liquid, and pack into greased 9×5-inch loaf pan.
- Bake at 375 degrees for 1 hour.
- Cool 10 minutes in pan.
