Easy fast recipe to use left over Turkey. This is a simple recipe that my children loved and now my grandchildren love. Turkey Pasta Bake contains all of the essentials for a proper meal. Served with a green salad of cucumber and cherry tomatoes for the additional textures for a balance meal. Also, when family and friends descend out of the blue, this Turkey Pasta Bake recipe will become a saviour. It takes only 40 minutes to cook and to add a bit of heat, add a sprinkle of paprika or cayenne pepper.  After all, there is no reason to throw away any food anymore – use your left overs..   • Put 200g penne in boiling water and cook for about 10 minutes until ready
  • When cooked, drain thouroughly
  • Finely chop large onion and garlic, and lightly fry 300g minced turkey for 5-10 minutes, until browned and cooked through
  • Mix the pasta and turkey mince thoroughly
  • Butter a large ovenproof dish and add the penne and mince
  • Pour over a 400g tin of chopped tomatoes
  • Place in a pre-heated oven at gas mark 5 (190°C, 375°F) and bake for 20-25 minutes until bubbling
  • Serve with a green salad with cucumber and tomatoes
