Sweet Potato Wedges have replaced normal fries in my house. These delights are simple to make, hold a lot of flavour, quick to cook and taste amazing. The colour of a sweet potato adds to the appeal giving them a better cooked experience. Serve as a snack or side dish, and you will be asked for more. I have sprinkled them with paprika or cayenne for variety and they are amazing.

Ingredients
- 2 large sweet potato wedged
- 4 tbsp olive oil
- 1 tbsp thyme
- 1 pinch sea salt to taste
- 1 pinch ground black pepper to taste
Instructions
- Preheat the oven to 200C/400F/Gas 6.

- Roast in the oven for 15-20 minutes, until lightly browned.
